Delicious Vegan Pasta Dish!

If you're craving fettuccine alfredo or any type of cheesy pasta dish, this will satisfy your craving. It's amazing!

Creamy Lemon Cashew and Spinach Pasta

Ingredients:
  • 1 pkg or 1 pound of bowtie pasta or noodles
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 3-4 chopped garlic cloves
  • 2-3 cups of spinach
  • 1 teaspoon red pepper flakes(optional)

Creamy Lemon Sauce:
  • 1 cup RAW cashews
  • 1 cup water
  • 3 tblsp of lemon juice or juice of one whole lemon
  • zest of 1 lemon
  • 1 tsp pepper
  • 1 tsp salt

Directions:
  1. Puree cashews in a food processor until smooth.  
  2. Add salt, pepper, zest and blend again.  
  3. Pour in the lemon juice and water and blend until sauce becomes creamy and smooth.
  4. In a med-large skillet, saute the garlic and pepper flakes in olive oil over medium heat. 
  5. Add the spinach and salt.  
  6. Once the pasta is cooked and drained, transfer back to pot. 
  7. Coat it with the spinach/olive oil and the creamy lemon mixture.
  8. Serve and enjoy!

First birthday cake!

It's been a while since the last update, but I'd like to share a cute, vegan elephant birthday cake I made. It was fun to bake it! My first two tier cake and first animal made out of fondant. :)
