Creamy Lemon Cashew and Spinach Pasta
Ingredients:
- 1 pkg or 1 pound of bowtie pasta or noodles
 - 1 tablespoon olive oil
 - 1/2 teaspoon salt
 - 3-4 chopped garlic cloves
 - 2-3 cups of spinach
 - 1 teaspoon red pepper flakes(optional)
 
Creamy Lemon Sauce:
- 1 cup RAW cashews
 - 1 cup water
 - 3 tblsp of lemon juice or juice of one whole lemon
 - zest of 1 lemon
 - 1 tsp pepper
 - 1 tsp salt
 
Directions:
- Puree cashews in a food processor until smooth.
 - Add salt, pepper, zest and blend again.
 - Pour in the lemon juice and water and blend until sauce becomes creamy and smooth.
 - In a med-large skillet, saute the garlic and pepper flakes in olive oil over medium heat.
 - Add the spinach and salt.
 - Once the pasta is cooked and drained, transfer back to pot.
 - Coat it with the spinach/olive oil and the creamy lemon mixture.
 - Serve and enjoy!
